What is donner meat?

Donner (or doner) comes from the Turkish word for “turning”. The meat is seasoned, pressed onto a vertical spit and slowly cooked as it rotates, then shaved off in thin slices. In Britain it has been a late-night favourite since kebab shops spread across the country in the 1970s and 80s.

It is rich, well seasoned and very satisfying, especially with a sharp sauce like chilli to cut through it.

Choosing your sauce
